Christmas comes only once in a year that's why it deserves a special attention. We have more than the usual gatherings, decorations, and most importantly, food preparations. That's why, this year, Lady's Choice is providing a list of special meals you can serve to your family for the holidays. All of these are made extra special with the help of the season's special ingredient - Lady's Choice Mayonnaise.

 

Classic Macaroni Salad

One cannot mention Christmas celebrations without bringing the Macaroni Salad to the table! It's a must-have for any Noche Buena feast, since it complements with any main course. You can also give a Macaroni Salad as a gift to a loved one this Christmas!

1. In a separate bowl, mix the rest of the ingredients.

2. Add Lady's Choice Mayonnaise and cooked Royal Salad Macaroni.

3. Season according to taste. Chill before serving.

Preparation Time: 15 minutes
Cooking Time: 2 ½ to 3 hours

Ingredients:
2tbsp oil
1 kg. beef brisket, cut into 2-inch cubes
1 tbsp oil
1 pc. onion, chopped
4 cloves garlic, chopped
1tbsp tomato paste
2 L water
2 pcs. bay leaves
1 tsp black peppercorns
1 cup tomato sauce
2 tbsp liver spread
3 tbsp soy sauce
1 tbsp brown sugar
1 pc. bird's eye chili
1 pc. green bell pepper, sliced
2 pcs. red bell pepper, sliced
1 pc. potato, cut into large cubes
1 pc. carrot, cut into large cubes
½ cup green peas
3 tbsp Lady's Choice Real Mayonnaise

 

Procedure:
1. In a pre-heated pan with oil, fry the beef over high heat just until browned. Do not overcrowd the pan. Set aside.
2. In the same pan, saute onions in oil over medium heat for a minute, add garlic and sauté for another minute.
3. Add tomato paste and cook for 2 minutes then add back the browned beef brisket.
4. Add water, bay leaf, and pepper. Cover, bring to a boil, and simmer slowly for 2 ½ to 3 hours over low heat. Remaining broth should be around 2 cups.
5. Add tomato sauce, liver spread, soy sauce, brown sugar, and chili. Mix well then simmer for a minute.
6. Add bell peppers, potatoes, carrots, and green peas then simmer for 20 minutes or until sauce is thick and vegetables are cooked.
7. Add Lady's Choice Real Mayonnaise, mix well, and serve.

Ingredients:
1 whole large Lapu-Lapu, cleaned and trimmed
½ cup calamansi juice
6 pcs. tomatoes, chopped
2 pcs. red onions, chopped
salt and pepper, as needed
oil, as needed
1 cup Lady's Choice Real Mayonnaise
4 cloves garlic, chopped
2-3 tsp hot sauce, or as needed
 

Procedure:
1. Make a slit along the back of the fish to create a pocket. Brush all parts evenly with calamansi juice and season well.
2. Stuff the fish with tomatoes and onions and brush both sides with oil. Grill until thoroughly cooked.
3. In a small bowl, mix together Lady's Choice Real Mayonnaise, garlic, and hot sauce. Add more hot sauce if preferred. Season well and serve with grilled fish.

 

Creamy Baked Salmon

Ingredients:
1 kg. salmon fillet, trimmed
2 pcs. lemon
Ground black pepper, as needed
Olive or canola oil for brushing
1 cup Lady's Choice Real Mayonnaise
Any fresh herb of your choice, chopped
Assortment of cheese, grated
breadcrumbs, as needed

 

Procedure:
1. Brush a baking pan with oil. Place the salmon fillets at the center and season well. Squeeze some lemon juice on top and leave the rinds on the baking pan.
2. In a small bowl, combine Lady's Choice Real Mayonnaise and chopped herb of choice. Mix well and coat the sides and surface of the fish fillet with the mixture using a spoon or spatula.
3. Top the coated fish with grated cheese and breadcrumbs then bake in a pre-heated 400 F oven until cooked through.

 

Stuffed Chops with Sesame Mayo

It may be common to serve porkchop as an everyday meal. However, when you serve it stuffed, it can transform this dish into unique a meal! You can stuff porkchop with other ingredients such as mushrooms, tomatoes, and herbs to bring out a much more exciting flavour!

Ingredients:
For the pork chops:
½ kg. pork chops (make a slit per piece to create pockets)
½ cup barbecue sauce
¼ cup Knorr Liquid Seasoning
3 tbsp sesame oil
¼ cup honey

 

For the herbed mushroom stuffing:
1 tbsp oil
3 tbsp onion, minced
1 tbsp garlic, minced
1 pc. Knorr Pork Cubes
2 tbsp raisins, chopped
1 cup fresh button mushrooms, sliced

 

For the sesame-mayo, mix together:
½ cup Lady's Choice Real Mayonnaise
1 tbsp Bango Kecap Manis
2 tbsp sesame oil

 

Procedure:
1. Marinate pork chops in barbecue sauce, Knorr Liquid Seasoning, sesame oil, and honey for at least 1 hour.
2. In a pre-heated pan, saute onion and garlic then add Knorr Pork Cubes. Mash then mix well. Add raisins, and fresh button mushrooms. Saute for a minute or until raisins swell.
3. Stuff the pork pockets with the sautéed mushroom stuffing. Secure with toothpicks. Pan-grill, grill, or fry, until cooked.
4. Serve with sesame-mayo, toasted garlic, and sesame seeds (optional).

Ingredients:
½ kg. potatoes, peeled
2 cups Lady's Choice Real Mayonnaise
1 tbsp mustard
2 tsp fresh dill (optional)
1 tsp honey
¼ tsp paprika
2 pcs. ham, chopped

 

Procedure:
1. Boil potatoes in salted water then simmer until tender. Drain and cut into 1 to 1 1/2 –inch cubes.
2. In a bowl, mix together Lady's Choice Real Mayonnaise, mustard, dill, honey, paprika, and ham. Season to taste.
3. Add prepared dressing to the cooked potatoes just enough to coat. Serve chilled.

 

Easy Baked Mussels

Ingredients:
1 kg. mussels, cleaned
water, to cover
3 tbsp store-bought pesto sauce
1 cup Lady's Choice Real Mayonnaise
¼ cup any soft or quick melting cheese, grated

 

Procedure:
1. Combine mussels and water in a pot. Bring to the boil. Let the mussels cook until shells open. Drain and discard shells that did not open.
2. In a bowl, combine pesto sauce and Lady's Choice Real Mayonnaise. Top this on mussels – about a teaspoon per shell.
3. Add grated cheese on each piece then bake or toast until the cheese melts.

Ingredients:
1 pc. onions, chopped
4 cloves garlic, chopped
2 tbsp margarine
1 cup button mushrooms, sliced
½ kg. beef sirloin, sliced into ½-inch thick
1 ½ cups cream
1 pc. beef cube
3 tbsp Lady's Real Mayonnaise

 

Procedure:
1. Saute onions, garlic, and mushroom in oil until fragrant. Remove from pan.
2. In the same pan, brown beef slices over high heat. Add cream, beef cube, and the sautéed onion mixture then let simmer until beef is cooked.
3. Stir in Lady's Choice Real Mayonnaise over low heat and mix well. Adjust seasonings and serve.

 

Spicy Buffalo Wings with Homemade Honey Mustard Dressing

Ingredients:
½ kg.chicken wings
1 head garlic, crushed
water to cover
black peppercorns, crushed
flour, as needed
2 pcs. fresh whole eggs, beaten
Breadcrumbs, as needed
1 cup butter, melted
tabasco sauce, to taste
2 tbsp sesame oil
¼ cup honey
Oil for deep-frying, as needed
1 cup Lady's Choice Real Mayonnaise
2 tbsp mustard
2 tbsp honey
1-2 tsp lemon juice

Procedure:
1. Poach chicken wings in seasoned water with garlic. Drain.
2. Season chicken wings then coat with flour, shake off excess, dip in egg then coat with breadcrumbs evenly.
3. In a bowl, mix together butter, tabasco sauce, sesame oil, and honey.
4. Deep-fry chicken wings until crisp then coat with the butter mixture. Serve with homemade Honey Mustard Dressing.

For the Honey Mustard Dressing:
1. Combine Lady's Choice Real Mayonnaise, mustard, honey, and lemon juice.

Creamy Lengua Estofado Recipe

Serves: 4-5
Preparation Time: 20 minutes
Cooking Time: 3-3 ½ hours

 

Ingredients:
1 whole pc. ox tongue, cleaned
water to cover for first boil
½ cup calamansi juice
water for boiling
¼ cup oil
4 pcs. white onions, chopped
6 cloves garlic, chopped
1 tbsp tomato paste
2-3 cups water
2 pcs. bay leaves
1 cup vinegar
½ cup soy sauce
1 tsp. black peppercorns
1 cup button mushrooms, sliced
½ cup green olives
4 tbsp Lady's Choice Real Mayonnaise
3 pcs. potatoes, sliced into wedges and fried (optional)

Procedure:
1. Combine ox tongue and water in a pot and bring to the boil. Discard water.
2. Add water again to pot just to cover the ox tongue. Add calamansi juice and bring this to the boil. Reduce heat to simmer slowly or just until tender – about 2 ½ - 3 hours.
3. Drain the tongue from the liquid, let this cool. Remove the skin of the tongue with a knife then slice into 1/2-inch thick pieces crosswise.
4. In a separate pot, sauté onion and garlic in oil until fragrant. Add tomato paste and sauté for a minute. Add water bay leaves, vinegar, soy sauce, pepper, and ox tongue. Mix well.
5. Bring to the sauce to the boil then let this simmer until ox tongue is very tender.
6. Add green olives and simmer for another 6-8 minutes.
7. Add Lady's Choice Real Mayonnaise, mix well and let simmer over very low heat until sauce is creamy thick. Adjust seasonings and serve.

Ingredients:
1 kg. pork, cut into 1 ½-inch cubes
2 cups barbecue sauce
½ cup Knorr Liquid Seasoning
3-4 tbsp calamansi juice
¼ cup canola oil
freshly ground pepper
1 cup Lady's Choice Real Mayonnaise
¼ tsp chives, chopped
¼ tsp dill, chopped
¼ tsp parsley, chopped
2 cloves garlic, minced
2 pcs. shallots or ¼ pc. onion, minced
Skewers, for grilling

 

Procedure:
1. Combine barbecue sauce, Knorr Liquid Seasoning, calamansi juice, oil, and pepper in a bowl.
2. Marinate pork in the barbecue mixture overnight.
3. Grill over hot coals until cooked. Serve with homemade Ranch Dressing.

For the Homemade Ranch Dressing:
1. Combine Lady's Choice Real Mayonnaise, fresh herbs, garlic, and shallots in a bowl. Serve chilled.

Ingredients:
12 pcs. tiger prawns, trimmed
½ pc. onion, chopped
3 cloves garlic, chopped
2 tbsp oil
½ cup fresh button mushrooms, chopped
1 cup Lady's Choice Real Mayonnaise
½ cup soft or any quick melting cheese, grated
½ cup breadcrumbs
1 pc lemon, sliced into wedges

 

Procedure:
1. Lay prawns on chopping board. Butterfly then remove the meat while keeping head and tail intact. Roughly chop meat, season, and set aside.
2. Place shells in boiling water until cooked and drain from liquid.
3. Saute onion and garlic in oil. Add mushrooms and chopped prawns. Saute until cooked then stir in Lady's Choice Real Mayonnaise. Fill prawn shells with the sautéed mixture.
4. Top with cheese and breadcrumbs then bake or toast until the cheese melts. Serve with lemon wedges.
