Boil water with some salt in a large pot.
Cook the fettuccine as per the instructions until they are al dente. Remember to reserve some of the pasta water for later.
While the pasta is cooking, fry the pancetta in a large skillet over medium heat until it's crispy.
In a separate bowl, whisk together egg yolks, Lady’s Choice Real Mayonnaise, and cheese. Then add some black pepper.
Combine drained pasta and egg mixture with pancetta. Mix well to allow the heat from the pasta to cook the eggs slightly and create a creamy sauce. If needed, add reserved pasta water.
Serve your delicious fettuccine carbonara with additional grated cheese on top!
