Who says veggies are boring? With Lady’s Choice Real Mayonnaise and some BBQ sauce, this grilled veggie sandwich gets pretty exciting.

Ingredients

  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp basil
  • 1/2 cup olive oil
  • 1/4 pc eggplant, sliced
  • 1/4 pc zucchini, sliced
  • 1/2 pc tomato, sliced
  • 2 tsps barbecue sauce
  • 2 tbsps Lady's Choice Real mayonnaise
  • 2 tsps honey
  • salt and pepper (to taste)
  • 2 pc wheat bread, toasted
  • 3 pc lollo rosso lettuce

Steps

  1. Infuse herbs in olive oil by placing the mixture in a pot over low heat until aroma of the herbs can begins to smell. Put off the heat.

  2. Season the vegetables with salt and pepper. Brush all sides with the infused oil then grill over high heat for less than a minute.

  3. In a bowl, combine barbecue sauce, honey and Lady's Choice Real Mayonnaise.

  4. Spread the mayo mixture on one side of each piece of bread. Arrange greens on one piece, top with the grilled vegetables, and cover with the other piece of bread.
